Vegan Bolognese Spaghetti With Red Lentils

Do you love bolognese pasta sauce, but would you like a version without minced meat? So we offer you such a tasty and healthy sauce in the following recipe.
We replaced the minced meat with red lentils, and this resulted in a healthy and balanced meal full of vitamins and health-promoting substances. Red lentils have countless health benefits. It contains a large amount of protein, replenishes the body with important iron, does not cause swelling, benefits the skin and hair, and has a positive effect on the heart and many others.
Red lentils are really nutritious, provide complex carbohydrates and proteins, provide a sufficient feeling of satiety after consumption and prevent an early feeling of hunger, which is why it is an excellent choice as a main dish for lunch or dinner.

  • 8 oz spaghetti (200 g)
  • 1 cup vegetable broth (225 ml)
  • 2 tbsp olive oil
  • 1 pc onion
  • 2 cloves of garlic
  • 2 pcs carrots
  • 1/6 oz garlic powder (5 g)
  • 1/3 cup red wine (100 ml)
  • 5 oz red lentils (150 g)
  • 1 lb chopped tomatoes (455 g)
  • 1/6 oz salt (5 g)
  • 1/2 oz dried oregano (15 g)
  • 1/2 oz dried basil (15 g)
  • parmesan cheese (for sprinkling)


  • Add olive oil to a large pan. When the oil in the pan is heated to a medium temperature, add the onion and carrot, both cut into small pieces, and also add the crushed cloves of garlic.
  • Sense by salt and add 2/3 cup of vegetable broth. Boil 5 minutes over cover.
  • Add red wine and cook for 10 more minutes over cover.
  • Boil the red lentils in a separate pot according to the instructions on the package. We cooked with red lentils, which were cooked for only 4 minutes. Of course, always cook it according to the recipe. Then strain it through a strainer and add it to the simmering mixture.
  • Add chopped tomatoes, oregano, and basil. Feel free to use both spices fresh, they don't have to be specially dried. As the last add the rest of the vegetable broth.
  • Mix it all together properly and cook for 5 minutes over cover.
  • In the next larger pot, cook the pasta according to the instructions, choose whichever you prefer. Spaghetti was the most suitable for us in the recipe.
  • Put the cooked pasta in a bowl, add the prepared sauce and sprinkle with parmesan cheese. We wish you a wonderful taste!
